I’d argue that at this point Japanese curry is so divorced from Indian curry as to be an entirely unique food stuff. Pretty sure if you served Japanese curry to just about anyone on the subcontinent they’d ask what it was, and then ask for some spice.

That really depends on the recipe; most don’t take that long at all.
I’ve made a Japanese curry roux (the block you can just buy at a Japanese grocery store, if you’re not insane like me) from scratch. My recipe used an apple but not a banana (also heavy cream, an onion, tons of spices,etc.), and it only took a few hours.
I don’t make it anymore (why waste hours when you can buy something just as good?) … but the point is you can make curry 100% from scratch in 3 hours, not 3 days.

They have breakfast diners that mainly serve beef and curry. It was my favorite thing to eat while I was there.
